Fuego puts the real spark in this Fourth of July holiday celebration with a tasty Independence Day Barbecue; beer, margarita and sangria specials; and cool live Latin fusion entertainment on Thursday, July 4 from 6-9 p.m. Sensational fireworks over Queensway Bay adjacent to the Queen Mary can be observed from Fuego beginning at dusk.
Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge at Hotel Maya, offers a unique setting at the water’s edge featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area with spectacular views of the downtown skyline, Queen Mary and Pacific Ocean.

Executive Chef Victor Juarez starts this Fourth of July meal off with a bang with Soup featuring Texan Chili Beef with Jalapeno Cheese Corn Muffins, followed by a variety of Salads including Baby Mix Greens with assorted dressings, Traditional Caesar Salad, Cole Slaw, Potato Salad, Summer Tomato Salad, and Cilantro Pepper Corn Salad.
Fuego also features a Trio of Stations including the widely popular Taco Station with hand-made tacos featuring Tequila Lime Chicken, Cilantro Jalapeno Skirt Steak and California Fish Roasted Pepper with salsa, guacamole, tomatillo salsa and cabbage slaw along with Pupusas with meat or cheese; the fresh and tasty Seafood Station featuring Peel and Eat Shrimp, Crab Claws and assorted Ceviches; and the Fuego favorite BBQ Station with BBQ Pork and Beef Ribs, Angus Sliders, Pulled Pork Sliders, Seafood Kabob, Roasted Corn on the Cobb, honey baked beans and macaroni and cheese.
Fuego’s Carving Station features Roasted Prime Rib with au jus and horseradish and Bourbon Glazed Ham with whole grain mustard.
The Fourth of July Barbecue entrée is a la carte, ordered through the server and includes one selection of Smoked Tri Tip, Grilled Snapper Vera Cruz, Fried Chicken, Green Bean Almandine, Scallop Potatoes, Yukon Potato Wedges and Rice Pilaf.
Delicious Desserts from the Extravaganza Buffet includes Apple, Cherry, Pecan and Chocolate Pies; Warm Fruit Cobbler, Bread Pudding with caramel sauce, Mexican Flan, Fruit Parfait, Crème Brûlée, Chocolate Mousse, and assorted Cupcakes and Brownies.
Guests enjoy complimentary coffee, decaffeinated coffee, tea, juices and soft drinks.
Fuego’s Fourth of July Barbecue costs $85.00 per adult and children, 13 and older; $42.50 for children, 12 and under; Free for children 5 and under; plus tax and gratuity. An 18 percent gratuity will be added to parties of six or more.
