Fuego at Hotel Maya will present a grill and chill Father’s Day brunch at the water’s edge on Sunday, June 19, 2011.

Accentuating its traditional brunch, Fuego will handle the grillin’ for dads this Father’s day featuring favorites like steak, chicken and lobster. And while Fuego’s grillin’, Dads will be chillin’ to $3 draft beer specials, bottomless wine and sangria, and the sweet sounds of live Latin jazz all amid the amazing open-air views of Queensway Bay and the Pacific Ocean.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge at Hotel Maya, offers a unique setting at the water’s edge featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio. Fuego’s stunning seaside scene also includes the Long Beach skyline and the Queen Mary.

Fuego Executive Chef Victor Juarez delivers a fabulous Father’s Day brunch menu that begins with Platters and Displays featuring imported and domestic cheeses, fresh fruit and berries, sumptuous salads such as baby mixed greens salad with assorted dressings, traditional Caesar salad, seafood salad, antipasto platter, and Chef’s selection of salads.

Guests will enjoy Fuego’s, fresh from the sea, Seafood Station featuring shrimp, king crab legs, and oysters with traditional accompaniments. Also available is a display of fresh ceviche and guacamole with tortillas and more. And don’t miss the popular Fiesta Taco Station with grilled skirt steak, chicken and seafood along with fresh, homemade salsas.

A highlight of the Father’s Day brunch is the Charcoal Grill Station, as Fuego will grill Dad’s selection of steak, chicken and lobster to perfection.

Fuego Father’s Day brunch also features traditional entrees such as Fuego Eggs Benedict with two poached eggs, sautéed spinach, Apple Wood smoked bacon, toasted English muffin with champagne Hollandaise sauce; New York Steak and Eggs served with chipotle-black beans and grilled vegetables; Citrus Braised Pork Carnitas with spicy green rice, chipotle-black beans and corn tortillas; and ‘Pepita’ Crusted Sea Bass Cilantro with garlic rice and seasoned vegetable.

Two can’t miss favorites are the Tequila Chicken Cilantro featuring a grilled marinated chicken double-breast, tequila cilantro cream sauce, grilled corn, pasilla peppers and onions; and Fuego Tamale Trio including Anaheim chili, chicken tinga, cheese spicy green rice and chipotle-black beans.

Delicious Desserts and Bread include an assortment of breads, rolls, Danish, pastries, muffins and luscious cakes, cookies, pies, mousse, petit fours and chocolate fondue.
