And to get America’s birthday party started, Fuego will feature a variety of drink specials such as $14 carafes of Frida Kahlo margarita or St. Germain sangria flora, $12 bottomless Poema Cava sparkling wine and $3 draft beer. Soulful sounds of live Latin jazz will be heard while taking in the amazing open-air views of Queensway Bay and the Pacific Ocean.
The red-hot Fuego barbeque station includes delicious pork and beef ribs, Angus sliders, chicken skewers, seafood kabob, roasted corn on the cobb, honey baked beans, macaroni and cheese and more. The Fuego Dinner buffet will feature hot entrée specialties and offer favorites from the unique carving, seafood, tacos and soup stations. An assortment of salads and an extravagant dessert buffet will also be available.
Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge at Hotel Maya, offers a unique setting at the water’s edge featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio. Fuego’s stunning seaside setting is just right to enjoy the Queen Mary fireworks show, rounding out an evening of patriotic activities and summer fun.

In addition to Fuego’s barbeque brouhaha, Executive Chef Victor Juarez presents an extravagant Fourth of July Dinner buffet starting with a variety of salads and soups including baby mix greens with assorted dressings, traditional Caesar salad, cole slaw, potato salad, summer tomato salad, cilantro pepper corn salad, and Texan chili beef with jalapeno cheese corn muffins.
Fuego will offer a round of culinary specialty stations including a Carving station featuring juicy roasted prime rib with au jus and horseradish; a Taco station with a choice of beef, chicken and fish tacos, roasted pepper salsa, guacamole, tomatillo salsa, cabbage slaw and crispy tortilla; and a Seafood station with fresh peel-and-eat shrimp and assorted ceviche.
Guests’ appetites will light-up at the sight of the hot entrée specials with a choice of smoked tri-tip, roulade fillet of sole, smoked Kielbasa sausage with onion and green pepper, baked almandine green beans with fried onions, scallop potato, and chili wedges of Yukon potatoes.
A selection of delicious desserts include an assortment of apple, cherry, pecan and chocolate pies; warm fruit cobbler; bread pudding with caramel sauce; Mexican flan; fruit parfait, Crème Brule; chocolate mousse; cupcakes; and brownies.
The Fourth of July barbeque and dinner buffet is Monday, July 4 from 6-9 p.m. and costs $65 per adult and $30 for children 12 and under, plus tax and gratuity. Holiday buffet service runs from 6-9 p.m.
