Fuego at Hotel Maya presents a cornucopia of delicious brunch selections on Thanksgiving all set to the sensational sounds of live Latin jazz at the water’s edge on Thursday, November 22, 2012.

Fuego, the modern, Latin infused indoor-outdoor restaurant and lounge at Hotel Maya, offers a unique seaside setting featuring 13-foot-tall glass walls that fully retract with seating inside and on the patio area. Fuego’s stunning open-air views include the Pacific Ocean, Long Beach skyline and the Queen Mary.

Fuego Executive Chef Victor Juarez’s triumphant Thanksgiving Brunch begins with a delicious Roasted Pumpkin and Corn Bisque Soup followed by an assortment of Salads and Displays including Baby Mesclun Salad with assorted dressings, Cinnamon Poached Sako Pear Salad, Braised Maple Leaf Duck Salad, Heirloom Beet Salad, Sweet Potato Salad with roasted chestnuts and smoked bacon dressing, Cheese and Charcuterie Station, Fresh Fruit and Seasonal Berries, and Antipasto Platter.

A sensational Seafood Station features Gulf Shrimp, Alaskan Crab Legs, Bodega Bay Oysters, Ceviche Classic Cocktail Sauce, Escabeche, Herb Remoulade, and Chili Shallot Vinaigrette.

The Thanksgiving Omelet Station prepares omelets to order with an assortment of Vegetable, Meat and Cheeses, and Chocolate and wild Berry Crepes with Cinnamon Vanilla Sauce.

The Fuego Carving Station features Herbed Roasted Turkey with natural gravy sauce, Prime Rib of Beef with creamed horseradish and sweet garlic demi glaze, Cranberry Citrus Marmalade, Fig Brioche Stuffing, Yukon Mashed Potatoes, and Roasted Yams and Marshmallows.

A delicious selection of holiday Entrees includes Classic Eggs Benedict with Canadian bacon, muffin and hollandaise; Applewood smoked bacon, Link sausages, and Caramelized Plantains; Grilled Lamb Chops with sweet potato, sugar peas and chimichurri sauce; Roasted Salmon with heirloom tomato leek ragout; Lobster Ravioli; Rotisserie Chicken; Chili Colorado; Young Carrots; and Brussels Sprouts.
